Background
The pursuit of a high level of protection of human life and health is one of the fundamental objectives of food law. Foodstuffs should not contain micro-organisms or their toxins or their metabolites in quantities that present an unacceptable risk to human health. This is related in particular to pathogens like Salmonella or Listeria monocytogenes whose absence should be strictly controlled in endangered foodstuff.
To ensure food safety from the place of primary production up to placing on the market or export an integrated approach is necessary. Specific hygiene measures such as compliance with temperature control requirements for foodstuffs, maintenance of the cold chain and keeping hygiene measures during sampling shall be adopted to minimise the risk to human health.
